Parmi les plats typiques de Pasco, on distingue le charquicán, le caldo de cabeza, le strukala, le cochon d'Inde épicé et le pachamanca. La gastronomie de Pasco est très variée car les influences espagnoles et indigènes sont mélangées.
Dans des régions telles que la vallée d'Oaxapampa, il est possible de déguster des plats typiquement allemands et autrichiens, grâce aux immigrants venus de ces pays aux 19e et 20e siècles.
Pasco est l'un des vingt-quatre départements du Pérou et est situé au centre du pays, dans la région dite andine.

1- Charquicán péruvien
C'est un plat de consommation très courant à Pasco, bien que l'on estime que ses origines proviennent du Chili. Son nom vient du quechua et signifie fouillis.
Il est dégusté dans la région depuis au moins 300 ans. Dans les archives historiques, il est rapporté que c'était précisément le charquicán que le libérateur San Martín et ses soldats consommaient lors de leur passage dans ce département à l'époque de l'indépendance.
Ses ingrédients sont la viande de cobaye, le charqui (viande déshydratée), le maïs, le yucca, la maca (plante péruvienne) et au moins trois types de tubercules endémiques des Andes.
Parmi ces tubercules se détachent le mashua, l'olluco et l'oie, qui est très similaire à la pomme de terre. Enfin, ají panca et chicha de jora sont ajoutés.
2- Bouillon de tête
Cette soupe pour se ressourcer est à base de tête d'agneau hachée et bouillie pendant plusieurs heures.
En accompagnement, des pommes de terre, du riz ou des grains de maïs sont ajoutés, et des herbes fortes telles que le chili et la menthe poivrée sont ajoutées.
Il est très courant de le trouver dans presque tous les marchés populaires de Pasco, et il est fortement recommandé aux personnes souffrant d'anémie ou de carences en vitamines.
3- Strukala
C'est un dessert typique de la région d'Oxapampa à Pasco et ses racines viennent des immigrants tyroliens.
Ce plat a été transformé pour inclure des éléments typiques de la région, comme la banane.
Ses ingrédients sont la farine de blé, les œufs, le lait, le sucre et la confiture de banane. Son aspect est analogue à une galette ou un croissant.
4- Cochon d'Inde épicé
C'est un plat de cochon d'Inde rôti puis cuit dans une sauce au piment rouge et aux arachides.
Il est servi avec des pommes de terre cuites à la vapeur et des œufs durs. Le cochon d'Inde est l'une des protéines animales les plus consommées du département.
5- Pachamanca
Son nom signifie "pot au sol" en langue quechua. Ce plat est l'un des plus traditionnels de Pasco et de nombreuses régions du Pérou et des Andes.
Son origine peut être enregistrée il y a environ huit mille ans, à la fin de l'archaïque. Le pachamanca a été déclaré patrimoine culturel du Pérou.
Sa cuisson est réalisée à partir de l'utilisation de pierres chaudes situées dans un trou creusé dans la terre, simulant une sorte de four.
Le contenu du pachamanca est du bœuf, du poulet, du porc, du cochon d'Inde, des légumes, des tubercules andins tels que l'oca ou le mashua, les haricots en cosse et le yucca. Il est assaisonné de chincho et de huacatay, des plantes également originaires du Pérou.
