Certains des plats typiques d'Ica au Pérou sont la carapulcra, la soupe sèche, le morusa de pallares, les chocotejas et le manjarblanco de pallar.
En général, la gastronomie péruvienne illustre le processus de métissage qu'elle a connu après l'époque de la conquête.
Carapulcra
Sa cuisine est une combinaison d'une riche tradition culinaire héritée des Incas et de leurs ancêtres, des produits espagnols, de la richesse de la cuisine mauresque et du savoir gastronomique des Africains, entre autres.
En soi, l'héritage africain dans la cuisine de cette nation n'est pas aussi enraciné que dans d'autres régions du continent américain.
Cependant, il est très présent dans certaines zones de la côte péruvienne, comme le département d'Ica.
Plats typiques d'Ica et ses ingrédients
La région d'Ica est située sur la côte centrale sud de la côte péruvienne. Étant une zone côtière, elle se caractérise par la variété de ses plats.
En fait, sur toute la côte péruvienne, il existe plus de deux mille types de soupes différentes et plus de deux cent cinquante desserts traditionnels. Certains ingrédients de plusieurs de leurs plats traditionnels sont décrits ci-dessous.
Carapulcra
Les plats typiques d'Ica, ainsi que dans d'autres régions du Pérou, ont des influences mondiales fusionnées pour créer un tout nouveau style de cuisine.
La carapulcra en est un exemple. C'est l'un des plats les plus anciens et contient un bon nombre de saveurs européennes, asiatiques et africaines d'ingrédients comme l'ail, les arachides et les épices.
Soupe sèche
En fait, comme son nom l'indique, ce n'est pas une soupe ordinaire. C'est un plat de pâtes qui est souvent servi en accompagnement de carapulcra.
De cette manière, l'ingrédient principal de la soupe sèche, les spaghettis, démontre une autre des influences de la cuisine péruvienne: l'italienne.
D'autre part, l'ají panca, un autre des ingrédients essentiels, est d'origine péruvienne. Ce poivre est plus fumé et sucré qu'épicé. La pâte d'Aji panca est largement utilisée dans les ragoûts et les sauces cuites à feu doux.
De plus, dans la préparation de cette soupe, vous avez besoin de cumin, d'ail, de poivre noir, de tomates carottes, de persil, de cuisses et de bouillon de poulet.
Morusa de pallares
Le pallar est un haricot blanc crémeux (haricot) de forme ovale d'environ deux ou trois cm de large.
Le morusa de pallares est l'un des plats typiques d'Ica où l'on peut observer l'influence de l'arrivée massive d'esclaves africains sur la côte sud du Pérou au 18ème siècle.
Leur régime alimentaire était basé sur des aliments bon marché, comme les haricots, qui étaient assaisonnés pour masquer la mauvaise qualité des produits dont ils disposaient.
Chocotejas
Pour sa part, le chocotejas est un autre des plats typiques d'Ica où le syncrétisme gastronomique de cette région est observé.
Ce dessert se compose de quelques bonbons au chocolat avec diverses garnitures, enveloppés dans du papier d'aluminium, puis du papier blanc, tordus sur le dessus avec les extrémités coupées en lanières.
Ses ingrédients sont variés: pruneaux enrobés de chocolat et de caramel, pacanes et caramel enrobés de glaçage blanc au citron, raisins secs imbibés de rhum ou de marmelade d'orange et caramel enrobé de chocolat.
Délicatesse blanche de Pallar
La première délicatesse blanche a été préparée à l'époque coloniale avec du poulet et des amandes. En plus des sucettes, du lait évaporé, du sucre blanc, de la cannelle, des clous de girofle et de l'essence de vanille sont utilisés dans sa préparation.
