Les plats typiques de Puno sont le reflet du mélange de la culture inca et de la culture espagnole. Beaucoup de leurs plats sont similaires à ceux des Boliviens, des Argentins et des Chiliens.
Parmi les plats typiques les plus remarquables de Puno, on trouve la Chupe de quinoa, la Huarjata, la Pesque de Quinua, le suche frit, le Chairo Puneño, le Cancacho, entre autres.
De son côté, le plat appelé Cancacho est constitué d'un cochon de lait ou d'agneau cuit au four, macéré dans de l'eau avec du sel, du cumin et du piment.
Le poisson quinoa est une purée de quinoa assaisonnée de lait et de fromage, et le Chairo est une soupe de bœuf et d'agneau, de pommes de terre, de courge, de blé, de chalona et de chou ou de chou.

1- Cancacho (cochon de lait rôti ou agneau)
Le cancacho est un plat typique à ne pas manquer dans les festivités de Puno. Pour sa préparation, il est prélevé sur un cochon de lait ou un agneau et macéré avec de l'huile, de l'ail, du piment, du citron et du cumin un jour avant la cuisson.

Prenez le cochon de lait ou l'agneau et mettez-le dans un grand bol pour qu'il rentre complètement dans le récipient contenant de l'eau salée et du piment, et laissez-le toute la nuit. Le lendemain, du sel, du poivre et du cumin sont ajoutés.
Ensuite, une fine couche de paprika est ajoutée et elle est baignée de vin et d'huile. Enfin, il est placé dans une rôtissoire et mis au four.
Par la suite, le cochon de lait ou l'agneau est complètement saupoudré de jus de citron. Ce plat peut être accompagné de pommes de terre au four ou frites et d'une salade de laitue.
2- Pêche au quinoa

Dans une casserole, placez la viande d'agneau et la chalona avec l'oignon haché, l'ail et le sel au goût. Ensuite, tout est bouilli jusqu'à ce que la viande soit cuite.
Plus tard, le bouillon est laissé seul et la viande est placée dans un récipient séparé. Les carottes, les pommes de terre, le chuño et la courge sont ajoutés au bouillon, coupés en morceaux longs et fins ou à la demande du cuisinier.

8- Chicharrón d'alpaga
Pour ce plat, la viande d'alpaga est utilisée en la faisant cuire dans de l'eau jusqu'à ce qu'elle sèche, puis en la brunissant avec la graisse produite par la viande elle-même.
Il peut être servi avec du chuño ou avec des pommes de terre.
9- Sucer du quinoa

La viande est d'abord cuite avec le quinoa dans une casserole avec de l'eau et du sel. Ensuite, les légumes sont ajoutés avec l'ail.
Pendant ce temps, une vinaigrette est préparée avec le beurre, l'oignon et de l'ail émincé et elle est ajoutée dans la casserole. Au moment de servir, du persil est ajouté à chaque assiette.
10- Pachamanca ou Huatía
La Huatía est un plat typique de Puno et d'autres départements du Pérou, qui est préparé dans un four en terre.
Cela se fait généralement pendant les mois où il ne pleut pas -mai et août-, car la terre doit être sèche.
Pour préparer le four à terre, un trou doit d'abord être creusé et des pierres y sont placées, qui seront ensuite chauffées avec du bois de chauffage. Pommes de terre, manioc, viande de mouton ou poisson y sont cuisinés.
Tout ce qui est placé dans le four doit être enveloppé dans du papier épais et une fois que le four y est enterré, c'est-à-dire que le trou est recouvert de terre et laissé là jusqu'à ce qu'il soit prêt à être mangé.
