Les plats typiques d'Ayacucho sont caractérisés par le mélange d'ingrédients, la variété des saveurs et des épices.
La viande de porc, de bœuf et d'agneau, le fromage (en particulier le fromage cottage), le maïs, la patate douce (patate douce), le rocoto (un gros poivron) et le piment fort (un gros poivron) abondent dans la cuisine d'Ayacucho. piments). 1- Tripes Ayacuchano
Les tripes Ayacucho sont l'une des soupes les plus connues d'Ayacucho. L'ingrédient principal est le ventre de vache (tripes) qui peut être de quatre styles différents, puisque cet animal a quatre estomacs. De plus, de la viande de porc, d'agneau et de vache est ajoutée.
Quant aux légumes, le maïs est ajouté aux tripes (c'est-à-dire au maïs), aux pommes de terre jaunes et au yucca. Au moment de servir la soupe, elle est accompagnée d'une vinaigrette de poudre de chili chaud et de feuilles de menthe.
2- Puca épicée
Les ingrédients de la puca épicée sont les suivants: porc, pommes de terre blanches, chili en poudre déshydraté, arachides grillées, ail, oignon et huile.
Pour préparer ce bouillon, le porc est d'abord coupé en lanières et cuit dans une poêle sans huile (la graisse naturelle du porc fera frire la viande).
Lorsque le porc est prêt, il est retiré de la poêle. Avec la graisse de la viande, une vinaigrette au piment, ail, oignon, sel et poivre est préparée.
Une fois ces ingrédients dorés, le porc est à nouveau ajouté et de l'eau est ajoutée. Les pommes de terre sont coupées en cubes et incorporées au mélange pour donner au bouillon une consistance plus épaisse.
Cette soupe est servie avec du riz et des pommes de terre bouillies.
3- Pachamanca
La pachamanca est un plat préparé avec du bœuf, du porc et de l'agneau. Les morceaux de viande sont cuits sur des pierres chaudes, comme le faisaient les aborigènes avant l'arrivée des Espagnols.
Les autres ingrédients présents dans ce plat sont les pommes de terre jaunes et blanches, le maïs frais et les haricots.
4- Uman
Le caldo uman ou caldo de cabeza est une soupe à base de tête de bélier. De plus, des légumes tels que les pommes de terre (blanches, jaunes et sucrées), le manioc et le céleri sont ajoutés. Pour assaisonner la soupe, les oignons, l'ail et les piments forts sont frits.
C'est l'un des bouillons les plus nutritifs et se consomme principalement en hiver. Ce plat est également préparé lors des fêtes patronales.
5- Teqtes
Teqtes est un ragoût végétarien, car il ne contient aucune viande.
Les ingrédients de ce ragoût sont des céréales (principalement des pois et des haricots), de la citrouille, du fromage, des œufs et du lait. Il est assaisonné de piment, d'oignons, d'ail et de certaines herbes fraîches (comme le persil).
6- Hapchi
Hapchi, également connu sous le nom de qapchi, est une salade typique d'Ayacucho. Il est très simple à préparer et ne contient pas beaucoup d'ingrédients.
La base de cette salade sont des pommes de terre (qu'elles soient jaunes ou blanches), du fromage frais (type fromage cottage ou fromage), l'oignon et le poivron jaune.
Hapchi est consommé comme collation. Il peut également être servi en accompagnement d'autres plats principaux, comme le piment farci.
7- Pushla
Pushla est une soupe dont l'ingrédient principal est des grains d'orge torréfiés. Ces grains sont broyés pour former une farine qui donne de la consistance au mélange.
Les autres ingrédients de pushla sont les céréales (haricots, haricots de Lima et pois), les pommes de terre, les œufs et le lait.

Dans certaines régions d'Ayacucho, la marinade n'est pas préparée avec du vinaigre mais est cuite, comme s'il s'agissait d'un ragoût.
9- Mazamorra
Mazamorra est un dessert typique d'Ayacucho, qui ressemble à un pudding en raison de son apparence. Il peut être préparé avec du maïs ou de la citrouille.
Pour réaliser ce dessert, vous commencez par faire cuire les légumes, que ce soit du maïs ou de la courge. Par la suite, une purée est préparée à laquelle du sucre brun, de la cannelle et des clous de girofle sont ajoutés au goût.
10- Humitas
Les humitas sont des collations et des sucreries typiques de tout le Pérou. A Ayacucho, une version de ce plat est également préparée. Ce sont des petits pains à base de maïs, bouillis dans des balles de maïs.
La pâte est préparée avec des grains de maïs frais. Les oreilles sont décortiquées puis mélangées pour produire une pâte plus ou moins homogène. Si vous souhaitez améliorer la consistance de la préparation, vous pouvez ajouter un œuf.
La pâte est étalée sur des enveloppes de maïs séchées, puis remplie de fromage, de raisins secs et de cassonade. Les feuilles sont bien fermées et bien liées pour que le contenu ne sorte pas. Ces petits pains sont bouillis et servis froids.
